Job Description

Title: Sommelier - Land and Sea Dept at Chicago Athletic Association

  • Cherry Circle Room - Milk Room - Events & Pop Ups

Position Objective : Their primary focus is the oversight, training, and execution of wine programs, as well as active involvement in daily operations. Sommeliers are responsible for the selling and serving of wine as well as assisting in ordering, receiving, and storage. 

Essential Functions:

  • Order and sell wine for the restaurant
  • Available to work a variety of hours, days and shifts, including weekends
  • Safely and effectively use and operate all necessary tools and equipment 
  • Ability to effectively communicate in order to perform and follow job requirements 
  • Ability to multi-task calmly and effectively in a busy, stressful environment
  • Work in a confined, crowded space of variable noise and temperature levels
  • Able to move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, and occasionally move and/or lift up to 50 pounds
  • Ability to stand and walk for an entire shift and move safely through all areas of the restaurant, which may include stairs, uneven or slick surfaces

Key Responsibilities and Duties* :

  • Provides wine and beverage service to guests in a fast paced, menu driven environment
  • Participates in daily service tasks/functions; actively engage in all service tasks in addition to wine sales
  • Creates and participates in staff wine tastings and educational opportunities
  • Assist with maintaining and developing existing wine lists in line with budgeted beverage costs
  • Properly receive product and submit invoices for wine items using BinWise software 
  • Perform regular and ad hoc inventories of wine, beverage, and restaurant supplies and track high cost items; place wine, beverage, and restaurant supply orders; and accept and inspect deliveries as needed/related to wine program(s)
  • Actively track and reduce loss through proper pour levels, minimizing waste and loss, alerting mgmt of corked/faulted wines, and dating bottles when opened to ensure optimal window of consumption
  • Maintains an accurate wine list, takeaways and storage locations; updates TOAST counts as orders and inventory fluctuate 
  • Use tact and good judgment when dealing with challenges pertaining to guests, vendors, and employees, and respond with patience and courtesy
  • Serve as a point of contact for private and semi-private events hosts & wine offerings during service as assigned/applicable 
  • Review and maintain par levels of supplies and equipment related to the wine program(s) 
  • Assist GM & Bev. Dir. in managing costs, driving sales, and growing the business in support of financial goals and objectives related to wine
  • Work a variety of days and shifts (including early morning, late nights, weekends, and holidays) as needed/able
  • Maintain a safe and enjoyable work environment
  • Other duties as assigned

*This role requires the following certifications:

  • Two years’ experience as a Wine Steward or similar relevant hospitality role. Level one Introductory Pass (Court of Master Sommeliers) or WSET Level 2 or higher preferred
  • Allergen Training
  • Alcohol Server Training

*May perform other duties as they are assigned

*Must be able to lift 40 lbs and stand for extended periods of time
